Tea Processing

從茶園到茶杯,一步步帶你了解好茶如何完成。
所有茶葉皆經至峰茶業嚴格篩選,只保留高品質茶菁。

採茶菁

選晴朗日、取一心二葉,於最適嫩度時採下。

Tea Harvesting

Hand-picked under clear weather, selecting one bud and two leaves at their ideal tenderness.

日光萎凋

以柔和日光降低水分,喚醒第一層花果香。

Outdoor Withering

Gentle sunlight reduces moisture and awakens the first layer of floral and fruity aromas.

室內萎凋及浪菁

日光萎凋後的茶菁移入陰涼室內靜置,使葉質逐漸鬆軟,苦澀與青味在此階段被溫和帶走。透過「萎凋」與「浪菁」反覆交替,使葉片微氧化、香氣甦醒,並逐步展現品種特有的風味層次,當發酵度達到理想狀態,便可停止進行。

Indoor Withering & Tossing (Lang-Qing)

After sun-withering, the fresh leaves are transferred indoors to rest in a cool, shaded environment. During this stage, the leaves soften and the harsh grassy notes gently fade. Through repeated cycles of withering and tossing (Lang-Qing), the leaves undergo controlled oxidation, allowing their intrinsic aromas and varietal character to emerge. Once the desired level of fermentation is reached, the process is halted.

殺菁

以高溫抑制氧化,固定香型並抑制青草氣。

Fixation (Sha-Qing)

High heat halts oxidation, locking in aroma and removing grassy notes.

揉捻

推壓揉製,使細胞破壁、茶汁滲出、滋味加厚。

Rolling

Rolling breaks cell walls to release juices, deepening body and flavor.

團揉

反覆包團、壓實、定形,形成烏龍茶經典球狀。

Ball-Rolling (Tuan-Rou)

Repeated kneading forms the signature semi-ball shape of traditional oolong.

解塊

將茶團拍散,使受熱均勻、外形完整。

Loosening

Tea clusters are loosened for even heating and better shape consistency.

乾燥

以低溫緩慢烘乾,固定香氣、收斂水分。

Drying

Slow low-temperature drying locks in aroma and lowers moisture.

風鼓

以熱風反覆吹拂,使含水降至最適值、香氣更集中。

Hot-Air Final Drying

Hot-air circulation reduces moisture to its ideal level and concentrates aroma.

檢枝選色

成品茶以人工與機械交互檢視外形、色澤與香氣,將枝梗、碎葉與不良品逐一剔除,只保留色澤均勻、形貌完整、香氣純淨的茶葉,確保批次品質一致。

Sorting & Quality Selection

Finished tea is inspected using both manual and mechanical methods to evaluate appearance, color, and aroma. Stems, broken leaves, and defects are carefully removed, preserving only leaves with uniform color, clean shape, and pure aroma to ensure consistent quality across each batch.

真空包裝

以低含氧封存香氣,保持最佳鮮度與熟成狀態。

Vacuum Packaging

Vacuum sealing preserves freshness and stabilizes the tea’s aging potential.
